What do you serve after the holidays that is low on expense and high on taste?
After the holidays I needed a simple, tasty, economical dish. This Easy Barley and Lentil Stew goes together easily. Here is the recipe:
8 Cups beef broth
2 cups sliced fresh mushrooms, optional
2 large carrots, diced
1 cup peal barley, uncooked
2/3 cup dry lentils
1 medium onion, mined
2 Tbsp garlic, minced
1 tsp dried basil
1/2 tsp ground thyme
1 tsp salt
2 bay leaves, optional
Mix everything in a large slow cooker and cook for five hours on high or 10-12 hours on low. OR, 18 minutes in a pressure cooker. Remove bay leaves and serve! Very yummy!
Will make this today!! Looks too good to pass up. Make only make half the recipe though and freeze.
