Need something quick, easy, and delicious for a holiday pot-luck or open house. Here you go:
- ½ pound broccoli
- Quarter of an onion
- 1 16-ounce (1 lb) container sour cream
- 4 ounces cream cheese
- 1½ cups grated cheddar cheese
- Whole-grain crackers or pitas, for serving
- Remove any large stems from the broccoli and mince it along with the onion. Place it in the bottom of a mini (1.5 quart) slow cooker. Add the sour cream, cream cheese, and cheddar on top and give it a good stir. Turn on to high and cook for a minimum of 1 hour (just long enough for the broccoli to soften and the cheeses to really melt) before serving.
Alternatively you could bake this dip in the oven on 400 degrees F for about 25 minutes or until bubbly on top!
